Vegan 100 Grand Rice Crispies
Ingredients;
- 3/4 cup brown sugar
- 3/4 cup plus 2 tbs of vegan butter or margarine (I use the smart balance brand)
- one 10oz bag of marshmallows
- 9 cups rice cereal
- enough chocolate chips to cover the top when melted, I used around 1 cup

Directions;
Begin by melting the 3/4 cup butter with the brown sugar, boil it until it gets up to 210°F. Lower the heat and add in the rest of the butter. Allow the butter to melt then add the marshmallows. Mix well until nice and sticky. Turn off the heat and add in the cereal. Mix well. Spread onto baking sheet. Spread chocolate chips on evenly.
At this point you can leave it how it is or like I did, you can melt the chocolate by turning the oven onto broil and putting the rice crispies in. The chocolate will only take a few minutes to melt to a point that you can take a spatula and spread them out to cover the treats evenly.
